Super Mini Muffins

These muffins may be mini, but they pack a big punch of fiber. Super Mini Muffins are great for digestion and blood sugar stability without tasting like cardboard.

Makes 24 muffins

2 cups whole grain flour
1 cup Grape-Nuts cereal
½ cup hemp seeds (raw, shelled)
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon baking powder
2 beaten eggs<br½ cup applesauce
⅓cup vegetable oil
1 cup blueberries

Paper mini muffin cups

Preheat oven to 400°F. In a large bowl mix dry ingredients. In a small bowl mix wet ingredients. Add wet to dry and stir until uniformly moist (do not over mix).
Place paper cups in muffin pan and add batter to each cup until ⅔ full (do not overfill muffins cups). Top each muffin with blueberries.
Bake 15 to 20 Minutes.
