Egg and Hash Brown Casserole

Ingredients:

  • 6 Eggs, beaten
  • 1 1/2 cup Shredded Hash Browns
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Broccoli Florets
  • 1/4 cup Yellow Pepper, chopped
  • 1/4 cup Onion, chopped
  • 1/4 cup Red Pepper, chopped

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Spread the hash browns out in the bottom of a small baking dish.
  3. Whisk the eggs together and add all of the vegetables to the eggs.
  4. Pour the eggs over the hash browns then sprinkle the cheese over the eggs.
  5. Cover the baking dish with foil and bake for 25 to 30 minutes.
