Black Bean Breakfast Burrito

Quick, filling and portable. This burrito can be ready to go in 5 minutes and travels well for rushed mornings.

Serves 1.

¼ cup black beans, drained
2 tablespoons tomato, diced
1 tablespoon onion, diced
1 egg
1 whole wheat tortilla
1 tablespoon cheddar cheese
1 tablespoon sour cream
2 tablespoons salsa

In a medium pan greased with nonstick cooking spray, scramble egg with tomatoes and onions

Heat black beans in microwave or a small saucepan.

Top tortilla with cheese and heat in toaster oven or microwave until cheese is melted. Place scrambled eggs and black beans on top of the cheesy tortilla, add sour cream and salsa, and wrap it up into a portable and satisfying breakfast.
