Ingredients:
- 4 Eggs
- 1/8 cup Green Pepper, chopped
- 1/4 cup Broccoli, chopped
- 1/8 cup Red Pepper, chopped
- 1/8 cup Onion, chopped
- 1 clove Garlic, minced
- Salt and Pepper to taste
- 4 Pieces Whole Grain Bread
- 1 Avocado
- 1 tbsp. Olive Oil
Directions:
- In a skillet, sauté the garlic and vegetables over medium heat for 5 minutes.
- Whisk the eggs together in a small bowl then add the vegetables to the eggs and stir.
- Pour the eggs into the hot skillet and stir them frequently in order to scramble them.
- Toast the four pieces of whole grain bread, then smear the avocado onto the bread.
- Lay the finished eggs on top of the avocado on the toast and enjoy.
