Scrambled Eggs on Toast

  • 4 Eggs
  • 1/8 cup Green Pepper, chopped
  • 1/4 cup Broccoli, chopped
  • 1/8 cup Red Pepper, chopped
  • 1/8 cup Onion, chopped
  • 1 clove Garlic, minced
  • Salt and Pepper to taste
  • 4 Pieces Whole Grain Bread
  • 1 Avocado
  • 1 tbsp. Olive Oil


  1. In a skillet, sauté the garlic and vegetables over medium heat for 5 minutes.
  2. Whisk the eggs together in a small bowl then add the vegetables to the eggs and stir.
  3. Pour the eggs into the hot skillet and stir them frequently in order to scramble them.
  4. Toast the four pieces of whole grain bread, then smear the avocado onto the bread.
  5. Lay the finished eggs on top of the avocado on the toast and enjoy.
