Pork with Pineapple Salsa

Yield: 4 Pork Chops

Ingredients:

  • 4 Boneless Pork Chops
  • 2 tsp. Olive Oil
  • 1 tsp. Jamaican Jerk Seasoning
  • 1/2 tsp. Black Pepper
  • 1 1/3 cups Pineapple, chopped
  • 1/2 cup Onion, chopped
  • 1 tbsp. Fresh Lemon Juice

Directions:

  1. Add one teaspoon of olive oil to a large, non-stick skillet and heat the skillet over medium heat.
  2. Sprinkle the Jamaican jerk seasoning and black pepper on both sides of the pork chops, then lay the pork chops into the pre-heated skillet.
  3. Cook for four minutes on each side, then remove the pork from the pan.
  4. Add the remaining teaspoon of olive oil to the skillet then add the pineapple, onion and lime juice. Stir frequently and cook for two minutes.
  5. Pour the pineapple salsa over the pork chops to serve.
