Sunny-Side Beans With Bacon Bits

This is adapted from the Fit2Me recipe Sunny-Side Beans.
You may want to add a dash of Tabasco or chili flakes if you like a little heat with your eggs. Or maybe a little Parmesan cheese sprinkled on top or some diced ham for a little added saltiness. It might even brighten up with a squeeze of fresh lemon or a sprinkle of fresh herbs.
The fun of the recipe is that you can make it your own by the flavors you choose.
Ingredients
1/2 cup water

2 cans green beans or wax beans

1 cup frozen baby Lima beans

1/4 cup minced onion

4 tablespoons bacon bits

2 tablespoons butter

4 large eggs, at room temperature

Freshly ground pepper to taste

Directions
Bring water to a boil in a medium saucepan. Add Lima beans. Reduce the heat to maintain a lively simmer and cook, uncovered, stirring occasionally, until heated thru 5 to 7 minutes. Stir in onion, bacon bits and butter. Remove from heat, cover and let stand until the butter is melted.

In a large bowl, mix the heated beans and butter with the green beans and mix until coated. Empty the bean mixture in an 8×8 baking dish. Using a large spoon, make a 1/2-inch-deep well in the beans for each egg. Break an egg into each well.

Bake until the egg whites are set, 15 to 30 minutes. Check after 15 minutes; if necessary, continue to bake, checking every minute or two, until the whites are set but the yolks are still liquid. Remove from the oven and let stand 5 minutes. Serve with a generous grinding of black pepper on top.
